The Longevity Table by Chef Mit – A Refined Culinary Journey at Amatara Welleisure™ Resort, Phuket Thailand 

Framed by a gentle Andaman sea breeze and panoramic ocean views at Sun & Moon & Scene, the setting for The Longevity Table invites you to slow down and reconnect. As someone who grew up in the South and spends a lot of time in the kitchen, I am often protective of our local flavours. However, seeing our regional staples reimagined through the Welleisure™ philosophy – where wellness and indulgence exist in perfect harmony was truly inspiring.

A Taste of Heritage The journey, helmed by Chef Nimit (Mit) Kaewpoung, winner of Iron Chef Thailand 2022, is an elegant expression of mindful techniques and premium ingredients.

The menu highlights included the following:

  • Chon Khamin: A delicate start featuring Cobia with fresh turmeric and pickled beetroot.
  • Soy-Cured Dry-Aged Red Grouper: The caviar and coconut cream added a sophisticated touch to the perfectly aged Andaman fish.
  • Muek Nam Dam: Squid balanced with a Phuket-style chilli sauce and horseshoe crab roe.
  • Phuket Lobster, Coastal Heritage: Grilled seven-colour lobster served with a Southern coconut curry leaf essence that felt both nostalgic and new.

Gaeng Liang Nam Tao

One of the most loved courses for me was the Gaeng Liang Nam Tao. In the South, we call pumpkin ‘Nam Tao,’ and this dish was a staple my mother made for me throughout my childhood. Even today, I cook this at home; it is the ultimate comfort food that heals the soul on busy days. Chef Mit’s version, featuring mantis prawns and crab meat, felt like a warm, nutrient-rich embrace that stayed true to its roots.

Mindful Indulgence

What sets this experience apart is the intentionality. Every dish noted its calories, reflecting a deeper approach to dining that celebrates balance and vitality without sacrificing the sensory pleasure of a world-class meal.

It was a refined celebration of the Andaman, reminding us all of the simple pleasure of living well.
